Ingredients & Prep
1 Tub Cherry Tomatoes (Halved)
2 Cloves Garlic (Chopped)
1 Medium Size Shallot (Chopped)
1 small organic can White (Cannellini) beans (rinsed)
1 small organic can of (Green Pigeon Peas) (rinsed)
1 small organic can ( Garbanzo, Chickpeas) (rinsed)
1 Cup fresh spinach (rinsed)
1 bunch Fresh Basil (Chopped)
1 table spoon extra virgin olive oil
1 lemon and (zester)
Salt/ Pepper
This recipe is best served with brown rice or grain or choice. Cook one cup of rice according to instructions.
