This recipe is by far the most popular and requested by my friends and family! You can prep some things ahead to make it even easier when it's time to plate!

My Mozzarella Bruschetta recipe is sure to wow your guests with bold flavors & will also look beautiful on your table.


Makes 15 slices of Bruschetta
Pre-heat oven to 350

You need
Oven Pan
White dish for plating

1 Baguette (like MB brand, Tripolis or Baguette of choice, you can slice this ahead, at an angle so it looks nicer)

1- Log Fresh Mozzarella (BelGioioso Fresh Mozzarella Cheese Sliced Log - 16oz) (thinly sliced)
1 Shallot (key ingredient) (minced)
1 tub Cherry Tomatoes ( cut in half lengthwise)
1 Garlic Clove (minced)
Fresh Basil (chopped)
1- Green lettuce for plating
1 Cup (Extra Virgin Olive Oil)
(You can make this ahead) In a bowl add Shallots, Cherry Tomatoes, Garlic, 2 table spoons of fresh basil, all cherry tomatoes, season with salt and pepper
(Let this marinate for about 10 minutes or you can make ahead a few hours before and place in your fridge for bolder flavor)
Place sliced bread on the baking sheet with 1 slice of mozzarella. T Toast until crisp edges & cheese melted (10min)

When bread toasts looks good enough to eat, remove from the oven and assemble

I suggest using a beautiful white plate for assembling and using the lettuce to place your toast.

Assemble the toast, add spooonfull of your cherry tomatoe marinade to each toast. Add a little bit of salt, pepper and a few more basil sprigs for decoration and flavor.
